Seth Griffith was born in Wallaceburg, Ontario on January 4, 1993. A minor hockey star for the St. Marys Lincolns of the GOJHL, he joined the London Knights of the Ontario Hockey League in 2009. With the Knights he was twice an OHL champion and was named to the OHL First All-Star Team in 2012-13.

Griffith was selected in the fifth round of the 2012 NHL Entry by the Boston Bruins and he would make his professional debut for the club's AHL affiliate in Providence in 2013. In 69 games for the Providence Bruins, Griffith recorded an impressive 20 goals and 30 assists.

In 2014-15, Griffith would split time between Providence and Boston. In 30 games at the NHL level he scored six times and added four assists. The 2015-16 season would be spent primarily in the American League with Griffith once again putting up impressive offensive numbers. In 54 games for Providence he racked up 23 goals and 48 assists for 72 points, second most in the AHL.

Prior to the 201617 season, Griffith was waived by the Bruins and subsequently claimed by the Toronto Maple Leafs. He would appear in just three games for the club before being waived once more. He was then claimed by the Florida Panthers and would suit up in 21 games for the club during the 2016-17 season. On January 19, 2017, Griffith was again placed on waivers and was re-claimed by the Maple Leafs for a second time. He was then assigned to club's AHL affiliate, the Toronto Marlies.

In the summer of 2017, as an unrestricted free agent, Griffith signed with the Buffalo Sabres. He would split time between Buffalo and their AHL affiliate during the 2017-18 season. In 21 games for the Sabres Griffith scored a pair of goals and added an assist. A free agent again in the summer of 2018, Griffith signed with the Winnipeg Jets.
