Rocco Grimaldi was born on February 8, 1993 in Anaheim, California. A product of the United States National Team Development Program and later the University of North Dakota, he was selected in the second round of the 2011 NHL Entry Draft by the Florida Panthers.

The 2014-15 season would be Grimaldi's first as a professional. He would spend the year primarily at the AHL level with the Florida's affiliate, the San Antonio Rampage, but would also get his first taste of NHL action. He appeared in seven games for the Panthers, recording his first goal along the way.

On November 18, 2014, Grimaldi accomplished the rare feat of competing in two games in one day. He took the ice for a matinee game for the San Antonio Rampage, was recalled by the Panthers, and suited up for the club that evening.

On June 23, 2016, Grimaldi's time in the Panthers organization would come to an end. He was traded to the Colorado Avalanche in exchange for Reto Berra. He would spend the majority of his time in the Avalanche organization with the club's new AHL affiliate, the San Antonio Rampage, where he had begun his professional career. In 72 games for the Rampage during the 2016-17 season, Grimaldi scored 31 times and added 24 assists.

In the summer of 2018, as an unrestricted free agent, Grimaldi signed a one-year deal with the Nashville Predators.

On the international stage, Grimaldi was part of the gold medal-winning American team at the 2013 World Junior Championship held in Ufa, Russia.
