Paul Thompson was born on November 30, 1988, in Derry, New Hampshire. A product of the University of of New Hampshire, Thompson was undrafted by an NHL club and instead signed as a free agent with the Pittsburgh Penguins upon completing his collegiate career. He made his professional debut at the AHL level with the Wilkes-Barre/Scranton Penguins in the late stages of the 2010-11 season. He would go on to appear in six games for the club, scoring a goal and adding two assists.

After two and a half years in Wilkes-Barre/Scranton, Thompson was traded on February 6, 2014 to the Columbus Blue Jackets in exchange for Spencer Machacek. He would join the Blue Jackets' AHL affiliate, the Springfield Falcons, for the remainder of the season.

In the summer of 2014, as an unrestricted free agent, Thompson signed a minor league deal with the Albany Devils. After scoring 33 goals during the 2014-15 season, Thompson signed a two year deal with Albany's parent club in New Jersey the following summer.

Thompson got his first taste of NHL action during the 2015-16 season, making his NHL debut on January 8, 2016. He would go on to appear in three games for New Jersey before being returned to the AHL.

On June 10, 2016, Thompson was traded to the Florida Panthers in exchange for Marc Savard's contract and a second-round draft pick. He would split time between the Panthers and their AHL affiliate during the 2016-17 season. In 21 games at the NHL level he recorded three assists. In 51 games for the Springfield Thunderbirds, Thompson notched 19 goals and added 23 assists.

In the summer of 2017, as an unrestricted free agent, Thompson signed with the Vegas Golden Knights. He would spend the 2017-18 season with the club's AHL affiliate, the Chicago Wolves, suiting up in 76 games and scoring 24 goals. As a free agent again the following summer, he inked a deal with the Florida Panthers.
