Torrey Mitchell was born January 30, 1985 in Greenfield Park, Quebec. The fourth round, 126th overall selection of the San Jose Sharks in the 2004 NHL Entry Draft, Mitchell is a graduate of the University of Vermont.

A hard working centreman, Mitchell spent three years at the University of Vermont where he earned rookie of the year honours in 2004-05 and led the club in scoring as co-captain in 2006-07. He appeared in eleven games with the Sharks' AHL affiliate in Worcester to complete his 2006-07 season, and made his NHL debut later that year in San Jose. In his rookie campaign, Mitchell scored 10 goals, 10 assists for 20 points and competed in each of the Sharks' regular season games.

Mitchell would miss much of the 2008-09 season due to injury, but would re-establish himself with the Sharks the following year.

On July 1, 2012, Mitchell's time as a Shark would come to an end. As an unrestricted free agent he signed a three-year contract with the Minnesota Wild. Due to the 2012-13 NHL lockout, Mitchell began the year with the San Francisco Bulls of the ECHL, where he would suit up in a pair of games. When play resumed at the NHL level, Mitchell joined the Wild and appeared in 45 games for the club during the shortened season, scoring four times and adding four assists.

On March 5, 2014, Mitchell was on the move again. This time traded to the Buffalo Sabres along with a pair of draft picks for Matt Moulson and Cody McCormick.

Mitchell would play for the Sabres until the trade deadline of 2015 when he was traded once again to the Montreal Canadiens for Jack Nevins and a seventh round draft pick.

In 2015-16, Mitchell would establish a new career-high with 11 goals and added eight assists for 19 points. He would spend parts of four seasons with the Canadiens before his time with the club would come to an end on November 23, 2017, when he was traded to the Los Angeles Kings in exchange for a conditional draft pick.
