Joe Jensen was born February 6, 1983 in Plymouth, Minnesota. The eighth round, 232nd overall selection of the Pittsburgh Penguins in the 2003 NHL Entry Draft, Jensen is a graduate of St. Cloud State.

A speedy forward, Jensen continually increased his offensive output as a member of the St. Cloud State Huskies through his four-year tenure. His career at St. Cloud ended in 2005-06 with the Plymouth, Minnesota native registering a career high in points (32), assists (18) and goals (14). Jensen's first professional hockey season was split between the Penguins' AHL affiliate in Wilkes-Barre and the ECHL's Wheeling Nailers. The following season Jensen spent time in the ECHL, AHL and the NHL, making his debut in the big league with the Carolina Hurricanes after being dealt by the Penguins.
