Serge Payer was born May 7, 1979 in Rockland, Ontario. A graduate of the OHL's Kitchener Rangers, Payer played five seasons in Kitchener, scoring 63 goals and 98 assists for 161 points before making his professional debut with the AHL's Louisville Panthers in 2000-01.

An offensively gifted player, Payer who missed some time throughout his junior career recovering from mononucleosis and Guillain Barre' Symdrome, spent the early part of the 2000-01 season with Louisville before earning a roster position with the parent club in Florida for 43 games. In 43 games with the Panthers, the Rockland native scored five goals and added one assist for six points.

Injuries slowed down Payer in 2001-02, limiting him to a mere 20 games with the AHL's Utah Grizzlies. Coming off a disappointing season in 2001-02, Payer broke out offensively with the AHL's San Antonio Rampage in 2002-03, showing off his playmaking skills with 31 assists and 41 points before joining the Ottawa Senators organization the following year.

The Rockland went on to spend the majority of the 2003-04 season with the Sens AHL affiliate in Binghamton, while playing a handful of games with the parent club. Following only one season with Senators organization, Payer returned to the Panthers in the summer of 2004.

Payer would spend the entire season with the Florida Panthers suiting up for 71 games with the club. In the summer of 2006, Payer would return to the Ottawa Senators after he was signed by the club as a free agent.
