As a kid growing up in Michigan, Jeff Mitchell had size, speed, and natural scoring ability when it came to hockey. While playing midget hockey as a 15-year-old with the Fruehauf Flyers he 52 goals and 115 points in 62 games. He never turned away from the rough stuff either, as evidenced by his 196 minutes in penalties. The next year he 65 goals and 115 points in 65 games with the Fraser Falcons in the same league.

At 17, Mitchell joined the OHL's Detroit Junior Red Wings in 1992-93, scoring ten goals and 25 points on a strong junior team that included the likes of Bob Wren, Pat Peake and Todd Harvey. In his third season in 1994-95 he scored 30 goals and 60 points in 61 games and was a key element in leading the Red Wings to the OHL championship that year. The team advanced to the Memorial Cup in Kamloops where they were humbled in the finals 8-2 against the host city.

Mitchell was selected by the Los Angeles Kings in the third round, 68th overall in the 1993 NHL Entry Draft. He began his pro career in the minors with the Michigan K-Wings of the IHL. His rights were traded to the Dallas Stars for Vancouver's fifth round pick, which has previously been acquired by the Kings and turned out to be Jason Morgan. Mitchell played the only seven games of his NHL career with the Stars in 1997-98, failing to record a point but picking up seven minutes in penalties.

Mitchell continues to play hockey in the minors with the St. John Flames of the AHL.
