Todd Simon was a highly productive centre in the Ontario Hockey League as a Junior leading the league with 146 points in 1991-92. Despite his impressive output he wasn't selected until the ninth round of the 1992 NHL Entry Draft when the Buffalo Sabres plucked him. Simon turned pro with their American Hockey League affiliate in Rochester and continued to show an impressive touch posting 93 points in 67 games in his rookie season. During his second season he continued to score in the minors and was called up by the Sabres for some NHL action.

In 15 games in the big leagues Simon was not able to reproduce his scoring ways that he enjoyed at other levels. Simon was held to just one assists, though he did deliver in the playoffs that spring when he scored the game-winning goal against the New Jersey Devils. Despite his playoff renaissance, Simon spent the next two years with the Sabres farm club and was released at the end of his contract.

Unable to catch on with another NHL club, Simon took his scoring prowess to the International Hockey League where he posted big numbers with the Las Vegas Thunder, the Detroit Vipers and the Cincinnati Cyclones.

In 2000 Simon elected to continue his career in Europe and signed with the Essen Mosquitoes of the German Elite League.
