George Parsons was born June 28, 1914 in Toronto, Ontario. A graduate of the Toronto Junior Hockey League's Toronto Native Sons, Parsons joined the Ontario Hockey Association Junior 'A' Hockey League in 1931-32 and spent the next three splitting his time with the OHA-Jr and the Toronto Mercantile Hockey League.

In his three years with the OHA-Jr the Toronto, Ontario native played in two Memorial Cup tournaments in 1933 as a member of the West Toronto Nationals and again in 1934 as a member of the Toronto Young Rangers. Following his two years with OHA-Jr and the TMHL, Parsons joined the Toronto Independent Hockey League's Toronto City Service in 1934-35 while splitting his time with the Ontario Hockey Association Senior 'A' Hockey League's Toronto All-Stars.

As a member of the All-Stars, Parsons led the team to the 1935 Allan Cup tournament before signing as a free agent with the Toronto Maple Leafs in October of 1935. After signing with the Maple Leafs, Parsons spent the 1935-36 season with the International Hockey League's Syracuse Stars before making his NHL debut the following year.

Although he spent the majority of the 1935-36 season with the Stars, Parsons played in five games with the Leafs and went on to play 37 games the following year before playing in a career high 43 games during the 1938-39 season.

In a game on March 4, 1939 versus the Chicago Black Hawks, Parsons suffered a career-ending eye injury.
