Stacy Roest was born March 15, 1974 in Lethbridge, Alberta. A graduate of the WHL's Medicine Hat Tigers, Roest joined the Tigers at the end of the 1990-91 season while a member of the Alberta Midget Hockey League's Lethbridge Y's Men.

In five regular season and 12 playoff games with Medicine during the 1990-91 season, Roest scored six goals and added seven assists for 12 points before joining them on a full time basis in 1991-92.

Roest spent four seasons in Medicine Hat and was a WHL East First Team All-Star in 1994 and WHL East Second Team All-Star in 1995 before he joined the AHL's Adirondack Red Wings at the end of his final year in Medicine Hat.

After playing in three games with Adirondack at the end of the 1994-95 season, Roest returned for the next two seasons and signed as a free agent with the NHL's Detroit Red Wings in the summer of 1997. Roest returned to Adirondack in 1997-98, leading the team in scoring before making his NHL debut the following year.

During the next two seasons, Stacy Roest played in 111 games with Detroit before the Minnesota Wild selected him in the 2000 Expansion Draft. Roest went on to play two seasons with the Wild notching a career high 27 points during the 2000-01 season before making a return to the Red Wing organization in 2002-03.
